Lucky Charms Marshmallow Ice Cream Sandwiches

I have always had to eat my bowl of cereal carefully and plan each spoonful for the perfect cereal to marshmallow ratio, because of course every bite need to have at least one marshmallow… right?!?!

I have a suggestion, how about you make these delicious Lucky Charms Marshmallow Ice Cream Sandwiches. Since this is such a special occasion you can make a day’s event out of it and start off by letting the kids make their own freezer bag ice cream.

 

Homemade honey vanilla ice cream

1 ½ cup whipping cream
1 1/2 cup half-and-half
1/2 cup sugar
1/4 raw honey
2 tsp vanilla

Mixed together all ingredients
Fill up one quart size bag with one cup of cubed ice
Fill up a sandwich size bag with one and a half cups of ice cream mix
Double bag ice cream mix in case the first one pops open
Put the bag with the ice cream mix inside the quart bag and seal up firmly

Now have your little ones shake, shake, shake for the next 20 minutes

Once the 20 minutes is up you can eat immediately for a soft set ice cream or put in the freezer for 1 hour for a firm ice cream

Chocolate chewy cookies

3/4 cup cocoa powder
1 teaspoon baking soda
1-1/4 cups butter (2-1/2 sticks) , softened
2 eggs
1 1/2 cups sugar
½ cup honey
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt

Now to make the delicious chocolate chewy ice cream sandwiches with Lucky Charms Marshmallows

Once your chocolate chewy cookies or fully cooled and your ice cream is at the perfect set, scoop about a quarter cup of ice cream on top of your first cookie and topped with the second cookie. Immediately roll your cookie in a bowl full of  Lucky Charms marshmallows and place it on a wax lined cookie sheet. Put the cookie sheet in the freezer for an hour to set, then enjoy.

For best experience, I recommend eating within 3 days, but I doubt they will last that long.
