During the school year, my go-to life saver is to always have a pot of soup on the stove. I am fortunate to have a store like WinCo to help me save on the things I need to keep my teenager’s bottomless pit tummies as full as possible, at prices that I can handle. As many of you know, we have a very large family, and everyone is coming and going on their own schedule. To keep myself sane AND everyone fed, we opt to make a new batch of soup every couple of days and keep it warm on the stove for anyone who needs a snack. My most loved soup that everyone begs for is my “Spicy Potato Soup” made with Johnsonville sausage rolls. This is a great way to add protein and flavor without busting the budget. This recipe is so incredibly easy that you can throw it together even as a last minute homemade, mid-week dinner. It tastes best when I let it sit on the stove and allow all the flavors to mingle together.
Spicy Potato Soup
3lbs of unpeeled cubed red potatoes
1 half gallon of 2%milk
1 16oz package of Jimmy Dean Johnsonville pork sausage (sage or spicy)
5-6 chicken bouillon cubes
2tbs of dried onions
1tsp red pepper flakes
salt and pepper
DIRECTIONS:
wash and cube all potatoes, boil potatoes in a large pot till about 75% tender
In a pot, fry sausage with red pepper and 1tbs of dried onion (drain fat)
drain potatoes and add milk, bouillon cubes, sausage, salt and pepper
serve once fully heated ….ENJOY!
